Kacey’s Kitchen, operated by Kacey, had been in business for three years and served as both a livelihood and a long-term investment for her family. Before launching the food truck, Kacey worked as a licensed practical nurse (LPN) for several years, providing care in the healthcare field before transitioning into culinary work later in life.
According to her daughter, Kyasia Knowledge, Kacey invested her life savings into the food truck, viewing the business as more than a job but as a legacy she hoped to pass on to her children. The truck supported a household of four children and became a familiar presence in the community, where customers often developed personal connections with the owner.
The fire resulted in the loss of cooking equipment, supplies, and the operational space required to continue business. While the damage has disrupted the family’s financial stability, they say Kacey remains determined to rebuild and return to serving the community.
The family has launched a fundraiser to assist with replacing equipment, restoring the truck, and helping Kacey resume operations. They are asking community members who have supported the business in the past, or who support small and family-owned businesses, to consider contributing or sharing information about the fundraiser.
Despite the loss, the family expressed gratitude that no one was injured in the incident and says their focus now is on recovery and rebuilding.
